Lucy Margaux is my daughters name and we make pure unadulterated wine ‘merum’. That is 000 wine - organic, zero added, zero taken away. I believe any addition compromises the integrity of the wine. So we have learned to work in an artful way to make wines stable and delicious. Those of us who work exclusively in this way take the greatest risks for the lowest reward, but know when the gods are on our side these wines taste better and age better.

 

I live in a region that had no organic viticulture when I moved there in 2002 and Natural Wines weren't herd of. I planted my vineyard in 2003 farmed according to Steiner’s agricultural lectures, never been spraying any chemicals (no copper, no sulphur, nothing!!!). I only use organic fruit from vineyards the Jasper Button and I manage and where I have established a long term relationship. 

 

In 2007 I made my first wines with only a small amount of sulphur and it was revolutionary at the time. In 2010 Tom Shobbrook, James Erskine and I were treated to Radikon by Sam Hughs and our worlds changed. I made my first natural-real-living wine (all compromised terms) or 000 wine (organic fruit, zero added, zero taken away) in 2010. I have spent 10 years of research in the winery to remove this last evil from my wine production and finally in 2016 all my wines were NOSO2 and now make pure wine. 

 

In 2016 Jasper Button, Arron Fenwick and I opened a local restaurant (the Summertown Aristologist) where only these types of nourishing wines are served (merum) and the same integrity, care and purity is put into the food (merenda).
