Podere Pradarolo is a certified organic farm located in the Parma hills 250 -500 metres above sea level. We opted for no addition of SO2, native yeasts only, no filtration, clarification, and stabilization or interventions such as sugaring or must concentration.

 

The grapes are fermented at uncontrolled temperatures with prolonged macerations 30 days to 9 months or more. We believe in typicity, local tradition and the use of only autochthonous grapes.
