Few people know of the fermented drinks enjoyed by Aboriginal people before the arrival of Europeans: drinks made from the sap of cider gums (Wayalinah) in Tasmania, the nectar of banksia flowers (Mangaitch) in Western Australia, the juice of pandanus nuts (Kambuda) in the Northern Territory. Today, we are learning about these and other ancient drinks - at the same time as a new generation of adventurous fermenters and distillers are incorporating Australia’s unique Indigenous flora - wattleseed, finger lime, quandong and more - into wines, beers, ciders and spirits.
